About The Farm
Baluar Café de Especialidad is a family-run coffee project located in Sonsón, Antioquia, Colombia. Situated at an altitude of 1,750 to 1,950 meters above sea level, the farm works on a small scale with 2 hectares in total, of which 1.65 hectares are dedicated to coffee cultivation. Founded in 2015, Baluar represents a new generation of Colombian specialty coffee producers who combine family tradition with innovation and a strong focus on quality.
The farm is led by Bayron Arcila López, a young producer and third-generation coffee grower. For Bayron, coffee is not only a profession, but a family heritage and a way of life. He learned the fundamentals of coffee farming from his father and grew up surrounded by coffee trees, understanding the value of the traditional work that has shaped his region for generations.
At the same time, Bayron and his family decided to take their coffee production further. Since 2015, they have been exploring controlled fermentation and differentiated processing methods on their farm, creating unique and complex cup profiles while preserving the traditional values passed down through the family.
Baluar cultivates Arabica coffee, including varieties such as Castillo, Bourbon, Castillo Naranjal, Colombia, Gesha and Pink Bourbon. The farm works with washed, honey, natural, semi-washed and experimental processes, as well as extended, anaerobic and yeast-inoculated fermentations. Coffee is selectively hand-picked and grown under partial shade, with an annual production of around 4 tons.
With an official cupping score of 85 points, Baluar Café de Especialidad offers small lots and microlots, available both at origin and through storage in the United States. Direct export is available upon request. The farm also works in long-term collaboration with Unblended Coffee for quality control, grading and logistics.
Baluar has been a three-time finalist in the national competition Colombia Tierra de Diversidad, reaching the auction stage, and won the municipal competition La Mejor Taza de Café Sonsoneño 2025. Beyond coffee production, the farm is also committed to working with young people from the region, encouraging innovation in farm-level specialty coffee. Baluar stands for a bridge between inherited wisdom, family work and the science of modern specialty coffee.
